Rhubarb Chutney

Ingredients
  

  • 3 cups rhubarb, sliced
  • ½ cup onion, chopped
  • ½ cup brown sugar
  • cup apple cider vinegar
  • Zest and juice of one orange
  • 2 tablespoons crystallized ginger, finely chopped
  • ½ cup raisins
  • ½ teaspoon ground cloves
  • 1 teaspoon cinnamon

Instructions
 

  • Combine ingredients in a medium sized, stainless steel saucepan and bring mixture to a boil. Turn down heat and allow to simmer for 12 minutes or until slightly thickened, stirring occasionally. Remove from heat and cool. Refrigerate until ready to use.
