Rhubarb Chutney
a delicious condiment
Ingredients
- 3 cups rhubarb, sliced
- ½ cup onion, chopped
- ½ cup brown sugar
- ⅓ cup apple cider vinegar
- Zest and juice of one orange
- 2 tablespoons crystallized ginger, finely chopped
- ½ cup raisins
- ½ teaspoon ground cloves
- 1 teaspoon cinnamon
Instructions
- Combine ingredients in a medium sized, stainless steel saucepan and bring mixture to a boil. Turn down heat and allow to simmer for 12 minutes or until slightly thickened, stirring occasionally. Remove from heat and cool. Refrigerate until ready to use.

Little Gem Rhubarb Marmalade
5 pounds rhubarb, 4 pounds sugar, grated rind and juice of 5 oranges. Peel rhubarb, cut in small pieces, add sugar and cook slowly for and hour or more. Add orange juice and peel and cook to desired thickness. B.C.B.
